I am building 2 systems one for me and one for {ESC}Beauty and have done extensive research on processors and cards and I found that for now what im going to do is go with the I3 2100 (microcenter for $99.99) I3 is faster than all AMD quad core and keeps up with the 6 core processor by AMD. Also found that with games there really is only about 4 frames difference per second than I5 2400 and just a couple frames more behind the 2500k. I also chose the I3 cause it is an 1155 socket CPU and next year Ivy Bridge comes out and they will be 1155 socket also with a 22nm chip. so i would run the $100 I3 (which will have no trouble with all the latest games)for a year or 2 and move into an Ivy Bridge which will be faster than any other chip available. So save yourself the money on the processor and go I3 ...they are cheap and really great for games. Also the card I chose to go with that is GTX 560ti. Yes its a little more but what you just saved on buying an I5 (that you wont use all of) you will use all of the 560ti performance. definetley get a good board. Im not big on SLI anymore I used to be but thats more for enthusiasts who have the big money to spend on all the extras you need to get it running good. You would need a bigger Power Supply (more money) , SLI capable board (more money) and a larger case , full size (more money) and really its not neccessary if you run one really good card like the GTX 560ti. you wont need a P67 or z68 MoBo for overclocking if your not going to overclock and you cant with the I3 anyways so more money saved there. You can build a power house for under $600 with an intel chip and a 560ti thats all you would need. Also newegg has a sti 6870 which is way faster than a ati 6870 which is comparable to the 560 for $180 and a 6950 which is faster than 560ti for $220.
here is my reccomendations based on all that info.

here is a good article for benchmarking CPUs in game to see where they fall..... i3 2100 does very well

anyways good luck.

I3 2100 is 2 cores 4 processing threads and the I5 2500k 4 cores 4 processing threads.
In a sense the I3 is dynamically a 4 core CPU because it is hyperthreaded
