I love fish, but sometimes it can be bland. THIS will make it a party in your mouth. I made this recipe up and I'm putting it down here before I forget it. I made this with salmon and I admit, it was the best salmon I've ever had!!
Fish glaze
2 tablespoons of apricot preserves
1tablespoon of orange marmalade (with the orange peel in it)
1/4 cup of brown sugar
1 tablespoon of fresh ground ginger
1/2 teaspoon of garlic paste
1 tablespoon of soy sauce
1 teaspoon of cayenne pepper or red chili powder or use freshly ground hot pepper. (I used Indian red chili powder that will make you sweat).
1/2 teaspoon of black pepper
1/2 teaspoon of lemon peel
1/4 teaspoon of yellow mustard
Put all of it in a bowl and mix it up. It should be a reddish/brown, thick, and sticky. Before grilling/ baking the fish, put half of the glaze over the top of it (skin side down) and cook it. After about 5 minutes pull the fish out and apply the rest of the glaze and bake/grill until done.
This will give you that wonderful sweet fruity but spicy taste that is pleasing. I will only make my salmon this way from now on..

That does sound great! I may try that on some stripers(rock bass).
